Lemon-Tarragon Chicken

A simple chicken dish with a deliciously fresh, tangy sauce made with lemon and a hint of tarragon.
Ingredients
2 tbsp. margarine
8 medium skinless, boneless chicken breast halves (1 1/2 lb.)
2 cup fresh mushrooms, halved
2 cloves garlic, minced
3 tbsp. dry sherry
1/2 tsp. tarragon, crushed
1/2 tsp. lemon pepper seasoning
1 (14 1/2 oz.) can chicken broth
1/4 cup sour cream

LIGHT CHICKEN SALAD

3/4 cup light mayonnaise
1/2 tsp. ginger
1/2 tsp. salt
3 cup cooked chicken
1 1/2 cup red seedless grapes
1 cup sliced celery
1/3 cup sliced green onion
1/2 cup broken walnuts
Combine mayonnaise, ginger and salt.  Stir in chicken, grapes, celery, green onion and
walnuts.  Makes 5 1/2 cups.  Serve on lettuce leaf.
