Rich Chocolate Mousse

Ingredients

220 grams Semisweet chocolate

3 tablespoon icing sugar

3 tablespoon Hot strong coffee

3 Egg yolks

280ml tub double cream

1 teaspoon vanilla extract

Directions

In a double boiler over simmering water, melt chocolate.

Remove top pan from heat; stir in sugar and coffee.

Add one yolk at a time, stirring until smooth. Place top pan over boiling water; cook and stir for 3-4 minutes or until thick. Remove from the heat.

Meanwhile, whip the cream with the vanilla extract until thick, and then fold into the cooling chocolate mixture until you have a smooth, cohesive mixture.

Spoon into dishes. Top with whipped topping.
